Award-Winning Creative Cuisine
A creative synergy between restaurant owner and two head chefs is always a good sign that a
restaurant's cuisine will be well beyond expectations and, at Cortesses, a dynamic duo are
clearly at the helm. A native of Ireland, owner Michael Smyth has a wealth of international
restaurant experience. He began his training at the Savoy Hotel in London and his
professional career has taken him to the Moana Surfrider Resort in Hawaii, the Fairmont Hotel
in San Francisco, and for three years, he circumnavigated the globe aboard a P&O
passenger liner based out of Australia. Before moving to St. Augustine, he owned The
Aristocrat restaurant in Las Vegas, voted Best Gourmet Restaurant by readers of the Las
Vegas Review-Journal for four years running.
Cortesses Bistro is Michael's gift to Saint Augustine, America's Oldest City. For over five
years, he has created another one of his multi-award winning restaurants, and always
entertaining flamingo room. Come let yourself and the others around you be treated to the
1st Place prize winner of the popular T.O.S.T.A., Taste of St. Augustine, the
People's Choice Award. And 1st Place prize winner of the Chowder Debate. The Flamiingo
Room was voted Best Bar in Saint Augustine.
